Easter Sunday Recipe: Sonrise Cake

Here is an Easter Sunday recipe to add to your recipe card box and Sunday meal.  Easter Sonrise Cake is a simple, elegant holiday cake that will serve unexpected company within minutes.

1 Angel food cake, cut into 8 pieces
1 Instant sugar-free lemon pudding, mixed according to directions using skim milk.
1 lb. fresh strawberries, sliced
1 lb. fresh blackberries
2 fresh mangos, peeled and diced
1 Tbs. lemon juice
1/4 cup sugar
Light whipping cream

Lightly toss the fruit with lemon juice and sugar.

Spoon the pudding over sliced angel food cake pieces on individual serving plates. Top with mixed fruit. Garnish with whipped cream.

Insider tip: Use sugar-free angel food cake from your local grocer. The pre-made kind is always handy too.
