Summer means sunny skies and beaches, but it also means feeling confident in your own skin. Summer is here, and you might be more motivated to hit the gym and eat healthy. Eating the usual “chicken and veggies with no carbs” can get boring, so we’re here to add some variety to your summer diet!

Strawberry Treats

If you have a sweet tooth, put down the chocolate bar and pick up the fresh strawberries. Strawberries with peanut butter and dark chocolate are the perfect summer treat. All you need is strawberries, organic peanut butter or almond butter, and dark chocolate chips. Simply cut up your strawberries, put a layer of peanut butter on top, and sprinkle a couple chocolate chips on top. Throw the finished product in the fridge for an hour, and you have your perfect treats.

Spaghetti Squash Noodles

Add some spice to your spaghetti squash noodles and dazzle it with pesto, chicken, and cherry tomatoes.  The easiest way to make spaghetti squash is in a crock pot. Cut the squash in half and put it on high for 4-5 hours. Marinate it in your favorite sauce and let the crock pot do the rest. In the mean time, bake your chicken for 30 minutes at 400 degrees while it is marinating in pesto. For the final product, get a fork and scrape out the squash, creating your spaghetti squash. Layer it with more pesto, chicken, and sprinkle the tomatoes on and you’ll have yourself a very fit lunch.

Chicken and Avocado Burritos

Who says burritos can’t be healthy? All you need is chicken, avocados, black beans, mozzarella cheese, and some salsa. Grab some rotisserie chicken and spinach wrap tortillas. The meal takes less than 10 minutes to make, which is the perfect dinner for when you want to rush off to catch a glimpse of the summer sunset. Heat your tortilla up for 30 seconds on each side, and heat the black beans in the microwave for 2 minutes. Put everything together, and you have the perfect summer burrito.

Lettuce Wraps with Shrimp

If your summer diet includes cutting out carbs and dairy, this quick and easy meal is perfect for you. The needed ingredients for this delicious meal are lettuce cups, shrimp, salsa, and avocado. Cook your thawed out shrimp for 2 minutes on each side and repeat three times. Once your shrimp is cooked, wash your lettuce cups. Fill your lettuce cups with shrimp, your favorite salsa, and cut up avocado.

Stuffed Pepper

These stuffed peppers are sure to add some flavor to your summer. First, preheat your oven to 350 degrees. Next, cook your rice in a sauce pan for 15-20 minutes. In another pan, cook your meat until it is an even shade of brown. Arrange your hollowed out peppers into a baking dish with all seeds removed. In a bowl mix rice, meat, 1 can of tomato sauce, garlic powder, onion powder, salt, and pepper. Then, stuff your peppers with the mix and let them bake for 1 hour. These tender peppers will be sure to have your taste buds dancing with flavor.

Strawberry Spinach Chicken Salad

This light salad will make you feel replenished and refreshed. You will need spinach, 1 cup of strawberries, feta cheese, and chicken. Bake your chicken at 350 degrees for 30 minutes. Season with lemon juice, lime juice, and garlic. While this is baking, cut up your strawberries as small as you would like. Put the spinach, 1 cup of cut strawberries, and a sprinkle of feta cheese into a bowl. When your chicken is done, cut it to your liking and throw it into your perfect summer salad.
