Thirsty Thursday: Enjoy Trust Restaurant’s Penicillin #2 Cocktail

SD Entertainer is back at it again working with the best mixologists around San Diego, so get your taste buds ready for another Thirsty Thursday. We were excited to interview Juan Sanchez from Trust restaurant yet again, who has a recipe for a specialty cocktail you can make at home for your friends and family.

Juan Sanchez met with us to demonstrate Trust Restaurant’s take on a classic cocktail, The Penicillin #2. It is specifically inspired by a cocktail created by Sam Ross, from New York, who is a bartender at Milk and Honey. The original cocktail, made by Ross, is a scotch based cocktail.

The Trust Restaurant has a more refreshing take on this classic cocktail. Sanchez makes a house syrup made from ginger and honey. There is also freshly squeezed lemon juice, tequila, and a spritz of Mezcal over the top for the aroma. Needless to say, the Penicillin #2 is the perfect summer drink!

In the video, Sachez takes you step by step on how to simply make this refreshing drink, so you can definitely make it at home. Use 3/4 of an ounce of the house made ginger honey syrup, 3/4 of an ounce of freshly squeezed lemon juice, two ounces of tequila, mix it all together, and you have the Penicillin #2. Make sure to add Mezcal to the top and lemon zest to garnish it. It’s an easy-to-make drink you must try.
